Spring is here and apples can take centre stage in a simple , healthy salad which is ideal for lunchboxes or as a weeknight side dish.
Start by slicing your choice of apples into thin wedges or cubes. Add mixed greens (lettuce, spinach or rocket) to a bowl with thinly-sliced red onion and some lightly-toasted walnuts. Crumble feta cheese on top for a creamy touch.
Drizzle fresh lemon juice and a bit of olive oil over the salad. Gently toss all the ingredients together until well combined.
