As Easter approaches, Gus, our resident fishmonger at Pasadena, shares some tips for choosing fresh fish: look for flesh that is colourful, reflective and rebounds when pressed. He also emphasises the importance of inspecting the gills; vibrant red gills are a telltale sign of the freshest catch!
