Recipe & Tasting: Organic Mussels in a Rich Arrabiatta Sauce

For the month of September we’re celebrating organic products with special offers, organic farmer visits, plus dedicated organic recipe tasting and activations like this delicious Organic Mussels in Organic Arrabiatta Sauce.

Join us to try a version of this recipe featuring all organic produce this Saturday September 13th at Pasadena between 11.30am and 1pm where they will be served with our ploughman’s rolls made with organic flour.

INGREDIENTS:   SERVES 2

1kg Boston Bay mussels

1 x 400g jar Jensens Organic Arrabbiata Sauce

1 shallot (finely chopped)

1.5 tsp organic garlic, minced

2 tsp organic Italian herb mix

60ml organic olive oil

Black pepper to taste

Fresh parsley for garnish

INSTRUCTIONS:

1  In a large pot heat olive oil over medium heat. Add shallots and cook till soft (3 mins) then stir in garlic and cook for another 30 secs.

2 Add jar of sauce and a cup of water, bring to the boil then simmer for 10 mins. Stir in Italian herb mix and season with pepper.

3  Increase the heat to med-high.  Add the mussels to the pot, cover and cook for 3-5mins.  Shake the pot occasionally until the mussels open.  Discard any that do not open.

4  Transfer mussels and broth to warm bowls, drizzle with olive oil and garnish with parsley. Serve with organic ploughmans rolls.
