Beautifully Sweet & Spiced Gluten Free Apple Cake Recipe

Ingredients:

• 2 cups gluten-free flour
• 1 tablespoon coconut flour
• 1 teaspoon vanilla essence
• 1/4 cup coconut oil, melted
• 1/2 teaspoon baking powder
• 1 cup Royal Gala apples (currently on special for $3.80kg until Tues 1st April), sliced
• Dash of cinnamon
• 1/3 cup coconut milk
• 1/4 cup honey
• 1 teaspoon apple cider vinegar
• 2 eggs
• Connoisseur Ice Cream of choice to serve

Method:

In a small bowl, combine the sliced Royal Gala apples with a dash of cinnamon. Set aside to absorb the flavour while you prepare the rest of the ingredients.

In a large mixing bowl, whisk together the gluten-free flour, coconut flour, baking powder and cinnamon (to your liking).

In a separate bowl, whisk together the coconut milk, melted coconut oil, honey, eggs, apple cider vinegar and vanilla essence until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined. Set aside some apple slices for decorating. Gently fold in the cinnamon-coated apple slices, making sure they are evenly distributed throughout the batter.

Decorate the bottom of the pan with apples and pour the batter into a greased or lined cake tin. Bake at 175°C for about 30-35 minutes, or until a toothpick comes out clean when inserted into the centre.

Let the cake cool before serving. Add a dash of cinnamon over the cake if preferred and serve with a scoop of Connoisseur ice cream, currently on special ( until 1st April) for Adelaide’s Finest price of $5 each.
