Delicious Gluten-Free Broccoli Gnocchi

Ingredients

(Serves 4)

  • 600g broccoli (approximately 2 heads)
  • Salt (to taste)
  • Pepper (to taste)
  • 410g Gluten-free plain flour (or standard flour)
  • 4 garlic cloves, chopped
  • Garlic-infused olive oil
  • Fresh basil
  • Handful of pine nuts
  • Chilli flakes (to taste)

Method: 

  1. Chop the broccoli into small pieces and place them in a pot. Fill the pot with water, bring it to the boil over high heat, and add salt for flavour. Cook the broccoli for about 10 minutes until tender.
  2. Once the broccoli is tender, drain the water and mash the broccoli until smooth.
  3. Add flour and a pinch of salt to the mashed broccoli, and mix until it forms a dough.
  4. Roll out the dough and cut it into strips. Roll each strip into a rope shape and cut into small pieces.
  5. Use a fork to create a patterned shape by rolling the small pieces along the back of the fork.
  6. Boil water in a pot and cook the gnocchi pieces for 2-3 minutes until they float to the surface.
  7. In a separate pan, fry the garlic in garlic-infused olive oil for 30 seconds, then add the pine nuts and lightly brown them. Add chilli flakes, salt, and pepper to taste, and fry the gnocchi for another 1-2 minutes until golden and crispy.
  8. Stir in fresh basil and serve!
