
Chef Assist recipe of the week
Serves 4 – Smart Buy of $20-$25
Ingredients
- 6 AFS Pork and Fennel Sausages
- 2 capsicums, sliced
- 2 brown onions, sliced1/4 cup chopped basil leaves
- 2 tablespoons tomato paste
- 1 can diced tomatoes
- 1 cup chicken stock
- 1 tsp salt
- 1 tsp pepper
- 1 tblsp Italian seasoning
- 2 teaspoons minced garlic
- ¼ cup olive oil
Method
- Preheat large frying pan with oil over medium heat. Add sausages and brown on each side. Remove from pan and drain
- In the same pan, add garlic, basil and Italian seasoning, cook for 2 minutes.
- Add chicken stock, tomato paste, capsicum, onion, salt, pepper and bring to a simmer.
- Reduce the heat to low, add sausages back in with the veggies.
- Simmer for 15 minutes, or until sauce has thickened.
- Add to AFS hotdog rolls and enjoy!
Serving suggestion; serve with polenta and a fresh garden salad.
