Pork & Fennel Sausages with Sautéed Capsicum & Onion in our house baked Roll

Chef Assist recipe of the week 

Serves 4 – Smart Buy of $20-$25

Ingredients

  • 6 AFS Pork and Fennel Sausages
  • 2 capsicums, sliced
  • 2 brown onions, sliced1/4 cup chopped basil leaves
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes
  • 1 cup chicken stock
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tblsp Italian seasoning
  • 2 teaspoons minced garlic
  • ¼ cup olive oil

Method

  1. Preheat large frying pan with oil over medium heat. Add sausages and brown on each side. Remove from pan and drain
  2. In the same pan, add garlic, basil and Italian seasoning, cook for 2 minutes.
  3. Add chicken stock, tomato paste, capsicum, onion, salt, pepper and bring to a simmer.
  4. Reduce the heat to low, add sausages back in with the veggies.
  5. Simmer for 15 minutes, or until sauce has thickened.
  6. Add to AFS hotdog rolls and enjoy!

Serving suggestion; serve with polenta and a fresh garden salad.
