Pork & Fennel Sausages with Sautéed Capsicum & Onion in our house baked Roll
Ingredients
Serves 4 – Smart Buy of $20-$25
6 AFS Pork and Fennel Sausages
2 capsicums, sliced
2 brown onions, sliced
1/4 cup chopped basil leaves
2 tablespoons tomato paste
1 can diced tomatoes
1 cup chicken stock
1 tsp salt
1 tsp pepper
1 tblsp Italian seasoning
2 teaspoons minced garlic
¼ cup olive oil
Method
Step 1
Preheat large frying pan with oil over medium heat. Add sausages and brown on each side. Remove from pan and drain.
Step 2
In the same pan, add garlic, basil and Italian seasoning, cook for 2 minutes.
Step 3
Add chicken stock, tomato paste, capsicum, onion, salt, pepper and bring to a simmer.
Step 4
Reduce the heat to low, add sausages back in with the veggies. Simmer for 15 minutes, or until sauce has thickened.
Step 5
Add to AFS hotdog rolls and enjoy!
Serving suggestion; Serve with polenta and a fresh garden salad.
