Chocolate Bark: South Aussie Style from Jenny at the SA CWA (Stirling and districts branch)
Ingredients
- Melted butter to grease
- 400g dark cooking chocolate
- 2 tablespoons coconut oil
- 2 packets white chocolate Strawberry FruChocs, chopped into small pieces
- Almonds, chopped
- Apricot bar or dried apricots, chopped finely
- Popcorn halved
- Desiccated coconut for sprinkling on top
Method
- Grease a 30cm x 20cm oven tray with melted butter and line with baking paper.
- Put chocolate and coconut oil in a large microwave bowl and stir to combine. Cook on high (100%) stirring every 30 seconds for 1 1/2 to 2 minutes or until the chocolate is melted.
- Stir in half the FruChocs, almonds, apricots and popcorn into the chocolate mixture.
- Pour into prepared tray and spread evenly in a 5mm thick layer.
- Sprinkle with remaining FruChocs, almonds, apricots and popcorn and lightly press into the chocolate mixture.
- Top with dessicated coconut, if desired, chill for 30 minutes or until firm.
